Cecilia da parte sua, per mettere a punto la prima tavoletta di Chuao, ha avuto bisogno di trentuno prove (contro le cinque che servono per fare un “cru” e le dieci dei blend), alle quali vanno aggiunti 20 giorni di “affinamento” per far assetare i sapori; lo chef Heinz Beck ha dovuto poi far appello a tutta la sua capacità tecnica per non “soffocare” gli reveals large and round.
