Sabato scorso ho aprofittato dell'invito di alcuni amici dell'Università di Scienze Gastronomiche e sono andata in quel di Pollenzo per un tour didattico sul Barolo.

Appena arrivati siamo andati subito a visitare la famosa Banca del Vino accompagnati da Paolo che ci ha introdotto nei cunicoli pieni di casse di vino provenienti da tutta Italia e dopo aver bevuto un ottimo Blanc de Blanc di Altalanga ci siamo diretti alla volta di Monforte per finalmente dedicarci al Barolo, non prima però di pranzare con dell'ottima coppa e formaggi vari.
Bellissima la piccola azienda di Fantino che ci accompagna nella sua cantina dove si trova un rifugio utilizzato dagli ebrei per nascondersi in tempo di guerra e un pozzo che veniva usato per calare giù i viveri per i rifugiati. Ed eccoci al primo Barolo della giornata: un 2002 ma più curiosa ed interessante è stata la degustazione di due riserve Vigneto dei Dardi del 2000 e del 1999.
Poi ci siamo diretti a Dogliani, da Abbona che ci ha accolto nella sua cantina dove, dopo una breve visita, abbiamo dato inizio alle degustazioni con un Viognier '06, poi si e passati ad un Nebbiolo del '04 e infine ci siamo dedicati anima e corpo ai Baroli: un Terlo Ravera del '99 e un Pressenda del '01 e del '00, tutto accompagnato con un memorabile Tuma e dello speck trentino che ci hanno vermente aiutato a non soccombere sotto la forza di questi vini. Dopo una cena da Drezza ci siamo diretti verso Alba e questa volta mi sono dedicata all'altra grande mia passione....la birra! ed ho scoperto che quì in piemonte ci sono un sacco di microbirrifici che fanno birra artigianale...dovrò sicuramente tornare per approfondire anche questo aspetto.
La domenica dopo un aperitivo ed un ultimo saluto a Natale, il nostro Virgilio del Barolo, ci siamo diretti, in compagnia di Paolo e Keiko, alla Morra dove in un vigneto di Alzari abbiamo avuto la brillante idea di fare un picnic a base di formaggi, insalata e ovviamente di Barolo, in questo caso un meraviglioso '99 di Elio Grasso. Poi con ancora nel cuore le sinuose Langhe abbiamo fatto ritorno a casa con la promessa di tornare presto.

L'altra scoperta è stato il piemontese Albarossa ottenuto dall'omonimo vitigno, incrocio tra Barbera e Nebbiolo, creato con il tentativo di ottenere un vino che sposi assieme le caratteristiche di entrambi ma che comunque abbia una sua personalità. Le aziende che lo producono sono ancora poche. Io ho assaggiato l'Assioma di Dezzani e devo dire che se si cercava di ottenere un vino che avesse i profumi della Barbera e il nervo del Nebbiolo direi che ci si sta riuscendo. Il colore è un rosso rubino acceso, al naso si presenta vinoso e piacevolmente fruttato mentre in bocca troviamo un buon corpo ed un retrogusto piacevole. Chissà come si evolverà negl'anni?!.....voglio proprio scoprirlo e credo che approfitterò di un mio futuro soggiorno in Piemonte per acquistare alcune bottiglie and forget for a while 'time in the cellar.

The first wine tasting was a Recioto Sparkling Montetondo that despite the extremely positive given the delegate Onav I personally do not wowed that much, but perhaps it is due to the fact that I am not fond Recioto in quesat version as loses perfume and complexity. The second wine tasted
instead made his mark .... it was a Tokaji 5 puttonyos 1993. I finally removed the curiosity of taste this wine and I must say that is truly special. The nose reveals aromas of dried fruit, raisins, of course having the technical production of this wine that I socperto includes the addition of a paste to the juice of grapes withered on the vine and affected by botrytis, dried apricot and dates . The mouth hits its high acidity but is very well compensated by the high sugar content and hints of almond tostata.Lo was paired with a delicious chocolate Modicano which unfortunately has dominated with its aromas of wine.
The third was a Red Sabbioneta IGT to which I devoted a separate comment (see post below).
He then moved to the past for excellence, to Pantelleria proprosto nella sua versione liquorosa. Si presenta con un colore giallo oro con riflessi dorati e al naso prevalgono i fichi secchi e i datteri accompagnati da una nota balsamica data probablimente dall'alcol. In bocca è abbastanza equilibrato, non eccessivamente dolce, forse troppo caldo. Nonostante la sua potenza è stato sovrastato da un cioccolato belga fondente al 65%.
In seguito, in abbinamento ad un cioccolato fondente al 77% si è degustato un Marsala Super Riserva ottenuto dalla vinificazione di Cataratto e Inzolia invecchiati 4 anni in botte. E quì per accontentare il mio caro amico Andrea Wine che mi "accusa" di sentire profumi a volte assurdi confesso che al primo impatto questo vino mi ha richiamato alla mente il Crystal Ball (alzi la mano chi se lo ricorda!), impressione la mia comunque confermata da altre persone presenti dovuta penso all'elevato grado alcolico di questo vino. Sono emersi poi profumi decisamente più piacevoli come il legno di rovere e una nota di liquirizia.
Questa volta l'abbinamento col cioccolato è stato veramente azzeccato.
La serata si è conclusa con un Marsala Fine Rubino caratterizzato da profumi speziati di pepe e noce moscata con un sentore in bocca di amarena che si è abbianato discretamente con un cioccolato fondente all'85%.
Non c'è che dire, sia i vini che i tipi di cioccolato proposti erano vermente interessanti ma forse troppo complessi per essere abbinati e degustati tutti in così poco tempo. Credo che per capire appieno cosa c'è dietro un bicchiere di Tokaji non siano sufficienti tre minuti ma in fondo, lo scopo era quello di scoprire prodotti nuovi...ora speriamo solo si presentino altre occasioni per degustarli con il dovuto rispetto che richiedono.

Domani sera degustazione di vini passiti che sposeranno (speriamo) il cioccolato.

La serata è organizzata dall'Onav che proporrà una degustazione di cioccolato modicano, piemontese e belga assieme a Marsala, Passito di Pantelleria, Recioto di Soave, Rosso di Sabbioneta (per me una scoperta) e per concludere in dolcezza un Tokaji del 1993!
